Grilled Vegetable Roll-Up

Ingredients
1 Brooklyn Bred Traditional or Sprouted Grains Lavash Roll-Up
2 oz Pesto Mayonnaise
3 slices Smoked Gouda Cheese
1 cup Fresh Spinach Leaves, washed
4 grilled Zucchini slices, sliced lengthwise
1/2 cup grilled Red Bell Pepper, sliced
Salt, to taste
Black Pepper, to taste -
Directions
1. Lay lavash on a flat surface, bubble side down with perforation vertically oriented.
2. Spread pesto mayonnaise over entire surface of lavash.
3. Layer gouda cheese, zucchini, spinach, and red bell peppers. Leave about 2” of space at top of lavash.
4. Sprinkle with salt and black pepper to taste.
5. Roll away from you towards top of lavash.
6. Let lavash sit on seam while cutting down the middle along the perforation, so as not to unravel.
7. Plate and serve.
