Pulled BBQ Chicken Sandwiches

  • Ingredients

    4 Brooklyn Bred Bistro Buns
    1 tbsp EVOO
    3 cups Rotisserie Chicken, shredded
    8 slices Swiss Cheese
    1 cup Red Onion, sliced thin
    1 cup BBQ Sauce of your choice
    ¼ cup Cilantro, chopped
    2 cups Coleslaw
    Salt and Pepper to taste

  • Directions

    1. In a large skillet heat EVOO over medium-high heat.
    2. Add sliced red onions, reduce heat to medium and cook until translucent (approximately 7 minutes).
    3. Stir in shredded chicken, BBQ sauce, and cilantro, heat for 4-6 minutes. Remove from heat and set aside.
    4. In a medium size bowl add coleslaw, salt and pepper. Mix together and set aside.
    5. Place 2 slices of Swiss cheese on each bottom half of the four Bistro Buns.
    6. Toast directly on oven rack at 400°F for 3 to 5 minutes or until cheese is melted.
    7. Remove from oven and top with BBQ chicken and coleslaw.
    8. Finish sandwiches by placing the second half of each bun on top. Serve.
