Mozzarella and Prosciutto Panini

Ingredients
1 Brooklyn Bred Neapolitan Thin Pizza Crust – Rectangle, Racetrack or Sprouted Grain
2 tbsp Pesto, prepared
¼ cup Roasted Red Peppers, sliced
2 oz Fresh Mozzarella Cheese, sliced thin
2 oz Prosciutto, sliced
½ cup Arugula, fresh -
Directions
1. Heat crust directly on oven rack or pizza stone at 400°F for 3 to 4 minutes.
2. Remove from oven and brush pesto over entire surface of crust.
3. Cut crust in half and place roasted red peppers evenly on bottom part of sandwich.
4. Layer half of the prosciutto followed by the mozzarella slices.
5. Layer remaining prosciutto and arugula. Place second piece of crust on top to complete sandwich. Plate and serve.
