Farmer's Market Zucchini Pizza

  • Ingredients

    1 Brooklyn Bred 7-inch Neapolitan Pizza Crust 

    1/2 small zucchini 

    ½ small yellow squash 

    ½ small red onion 

    1 tablespoon olive oil 

    1 small garlic clove, sliced 

    2 ounces goat cheese, at room temperature, divided 

    1 tablespoon milk 

    1 teaspoon fresh chopped rosemary 

  • Directions

    1. Preheat oven to 425°F. Thinly slice zucchini, yellow squash and red onion. 

    In 10-inch skillet over medium heat in hot oil, cook zucchini and yellow squash  about 5 minutes. Add red onion and garlic; cook 3 minutes longer. 

    2. In small bowl stir half of goat cheese and milk until smooth. Spread mixture onto Brooklyn Bred crust to within ½-inch from edge. Arrange sautéed squash mixture on crust. Top with small pieces of remaining goat cheese and sprinkle with rosemary. 

    3. Place crust directly on rack in oven. Bake 5 minutes or until crust is crisp and cheese is melted.
