Grilled Vegetable Panini

  • Ingredients

    1 Brooklyn Bred Neapolitan Thin Pizza Crust – Rectangle, Racetrack or Sprouted Grain
    2 oz Cheddar Cheese, shredded
    2 oz Mozzarella Cheese, shredded
    ½ cup Grilled Zucchini, sliced
    ½ cup Grilled Yellow Squash, sliced
    ¼ cup Grilled Red Bell Pepper, sliced
    Salt, to taste
    Black Pepper, to taste

  • Directions

    1. Evenly sprinkle cheddar and mozzarella cheese on entire surface of crust, bubble side down.
    2. For crispy crust, bake directly on oven rack or pizza stone at 400°F for 5-8 minutes, or until toppings are melted and crust is crisp. For chewy crust, bake on a sheet pan.
    3. Remove from oven and layer one half of crust with roasted zucchini, yellow squash and red bell pepper.
    4. Sprinkle with salt and pepper to taste.
    5. Fold sandwich in half and cut into four portions. Plate and serve.
