Ingredients
1 Brooklyn Bred Neapolitan Thin Pizza Crust – Rectangle, Racetrack or Sprouted Grain 2 tbsp Pesto Mayonnaise ½ Avocado, sliced 4 oz Fresh Mozzarella Cheese, sliced thin ½ cup Coleslaw or Red Cabbage, shredded ½ cup Arugula, fresh ½ cup Roasted Red Pepper, sliced Salt, to taste Black Pepper, to taste
Directions
1. Heat crust directly on oven rack or pizza stone bubble side up at 400°F for 3 to 4 minutes. 2. Lay crust on a flat surface bubble side down, spread pesto mayonnaise over entire surface. 3. Cut crust in half. 4. Layer sliced Avocado on bottom half of crust / sandwich. 5. Top with mozzarella slices, followed by coleslaw, roasted red peppers and arugula.
6. Sprinkle with salt and black pepper to taste. 7. Place top piece of crust on top. 8. Cut into desired portions. Plate and serve.
