Lavash Roll-Ups

Cheesy Mushroom Quesadilla

Comfort Food at its Best

DIRECTIONS

1 perforated Brooklyn Bred Sprouted Grains Lavash Roll-up
½ cup sautéed mushrooms
¼ cup red bell peppers
1/3 cup shredded Monterey jack cheese
1 handful fresh spinach

Heat pan on medium heat.
Lay out 1 perforated roll-up.
Sprinkle half the cheese onto one half of the roll-up.
Sprinkle spinach on top of the cheese, followed by the mushrooms and peppers.
Top with remaining cheese.
Fold the empty half of the roll-up over the filled half.
Spray pan with olive oil and cook each side for about 2-3 minutes until golden brown and the cheese is melted.
Serve warm.
